This pack contains a 1kg premix to make 22.5kg of traditional salami. Your not required to add curing salts but you can incorporate cultures and mould during production. Enhance or personalise the premix by adding chilli flakes, fennel seeds and wine. The choice is yours!
Ingredients: salt, dextrose, sugar, mineral salt (451), antioxidant (316), preservative (251, 250), spice extract, vegetable oil, herb extract.

Emulsion to be made below 4 degrees Celsius where possible.
