Texan Beef Sausage Premix (Meal)
Edwards Recipe
Makes 5kg of sausage mixture.
Ingredients: Potato starch, sage, black pepper, parsley (dried), cayenne pepper.
Can be made with either beef or lamb, chucks or shoulders, that are 75-85% lean.
Add:
- Four eggs (whisked)
Method: Mix the dry ingredients together slowly with the protein. Add 500ml of filtered water or a crushed ice/water combination. Use less water if the mixture appears to becoming too wet.
Mince through either an 8mm or 10mm mincer plate once.
No preservatives or additives.
