Dextrose Monohydrate is a simple sugar derived from corn and is typically used in semi-dry and dry cured sausages. It helps to counteract the salty taste and feeds the good bacteria during fermentation. This in turn contributes to an enhanced colour and flavour of the finished product.
Dosage: To taste, 20-30g per kilogram of sausage mixture is a good guide.
